500 grams Basa fish , salmon or any white firm fleshed fish (1 fillet)
1 teaspoon Black pepper powder
1/2 teaspoon Salt
4 cloves Garlic , crushed
4 sprig Coriander (Dhania) Leaves , finely chopped
4 sprig Parsley leaves
1/2 cup Homemade tomato puree
1 teaspoon Cumin powder (Jeera)
1 pinch Saffron strands
2 teaspoons Paprika powder
1 Lemon , juiced
1/4 cup Extra Virgin Olive Oil
2 Onions , julienned
1/4 cup Black olives , sliced and pitted

Steps:

  • To begin making the Moroccan Baked Fish Recipe,combine garlic, parsley, cilantro, cumin powder, paprika and saffron, lemon juice and tomato puree, salt, pepper powder and half the olive oil in a large bowl.

1 bunch fresh coriander
2 cloves garlic
2 tablespoons vinegar
Juice of 1 lemon or lime
1 tablespoon paprika
1 tablespoon cumin
1/2 teaspoon crushed chili
Coarse salt and freshly ground pepper to taste
2 tablespoons olive oil
1 4-pound whole fish such as striped bass, sea bass, red snapper, head and tail intact

Steps:

  • Reserving a few sprigs of coriander for garnishing, combine all the ingredients except the fish in an electric blender and mix until smooth. With a sharp knife, make three slashes in the skin. Smear the mixture in the fish cavity and over the skin. Leave to marinate at room temperature for about 2 hours.

2 (3-pound) whole fish, such as striped bass, tilapia, flounder, or sole, cleaned and scaled
2 limes, juiced
3/4 cup Spanish olive oil, divided
2 onions, peeled and thinly sliced, divided
1 large green bell pepper, cored, seeded, and thinly sliced, divided
3 bay leaves
Salt and freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
1 tablespoon minced garlic
2 1/4 teaspoons kosher salt
1 teaspoon dried oregano, crumbled
1 cup tomato puree
2 tablespoons white wine vinegar
1 cup dry white wine
Chopped fresh parsley leaves, for garnish

Steps:

  • Rinse the fish well under cold running water and pat dry on both sides as well as inside the cavity. Make several slits about 1/3-inch deep on both sides of the fish. Place the fish in a non-reactive shallow dish or platter and pour the lime juice over the fish. Set aside while you continue with the preparations.
  • Preheat the oven to 375 degrees F.
  • Rub the bottom of a shallow glass or ceramic dish large enough to hold the fish with 2 tablespoons of the olive oil. Saute 1/2 of the onion slices and 1/2 of the pepper slices in 2 tablespoons olive oil and then place along the bottom of the baking dish. Tear 2 of the bay leaves into small pieces and sprinkle over the vegetables. Drizzle with 2 tablespoons more of the remaining Spanish olive oil and season with salt, black pepper, to taste, and crushed red pepper flakes. Place the fish on top of the sliced vegetables.
  • Using a mortar and pestle, combine the garlic, kosher salt and oregano and mash to form a paste. Spread the garlic paste inside the cavity of the fish and into the slits on top. Place the remaining bay leaf inside the cavity of the fish. In the same small bowl that you used to make the garlic paste, combine the tomato puree and vinegar and stir to combine. Pour this tomato mixture all over the fish. Top with the remaining onion and pepper slices and drizzle the remaining olive oil and the wine over the top. Season again with salt and black pepper, cover the dish loosely with aluminum foil, and bake until the fish flakes easily when pierced with a fork, 45 to 50 minutes. Garnish with the parsley and serve hot or warm, with the pan juices drizzled over all.

1 lemon, juiced
1/4 cup olive oil
2 garlic cloves, chopped
4 tablespoons Moroccan Spice mix, recipe follows
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon paprika
1 teaspoon turmeric
1 teaspoon ground ginger
1 tablespoon sugar
2 tablespoons kosher salt
2 tablespoons freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Score the fish with a paring knife by making several 1-inch slits in the skin on each side, being careful not to cut in too deep. Put the fish on a dish and drizzle with the lemon juice and 1/2 of the oil. Press the garlic into the score marks. Rub the spice mix all over the inside and outside of the fish. Cover with plastic wrap, and allow it to marinate in the fridge for one hour. Heat a skillet large enough to hold the whole fish over high heat until it is almost smoking. 2 -3 slices lemons
2 -3 slices onions
2 -3 slices celery

4 tablespoons lemon juice

12 peeled crushed garlic cloves
1 bunch chopped fresh parsley
3 teaspoons salt
3 lemons, juice of
2 (3 lb) cleaned scaled red snapper
3 sliced peeled carrots
12 sliced new potatoes
4 sliced tomatoes
1 sliced sliced seeded stemmed green bell pepper
1 sliced lemon
5 whole mild green chilies (such as anaheims)
