2 cups Mexican crema or sour cream
2 teaspoons kosher salt
4 tablespoons freshly-squeezed Mexican lime juice
2 1/2 pounds whitefish filets ( tilapia , grouper, sole, swai, etc.)

Steps:

  • Gather the ingredients.
  • Preheat oven to 375 F. Mix together cilantro leaves and diced onion and reserve for garnish.
  • Melt butter in a medium-sized skillet. Sauté chopped onion and garlic for about 5 minutes, stirring often, until onion is translucent.
  • Place sautéed onions and garlic, crema, salt, lime juice, and cilantro into a blender. Process until you have a soft green sauce.
  • Lightly grease a glass or metal baking dish. Place white fish filets in dish in a single layer. Pour sauce over filets. Move filets slightly so that some of the sauce gets in under the fish.

1 tbsp Lemon juice
½ tsp Salt
¼ tsp Pepper
3 slices Lemon (1/2 lemon)
1 cup Cilantro ( chopped)
2 tbsp Chopped onion ((optional) )
2 cloves Garlic (thinly sliced)
¼ inch Ginger (thinly sliced)
1 tbsp Olive oil
1 small Green chili ((optional) )
½ tsp Salt
¼ tsp Pepper
1 tbsp Oil or spray for the pan

Steps:

  • Preheat the oven to 400°F/ 200°C / Gas Mark 6
  • Prep the fish - Wash, clean, and pat dry the fish. Season with salt, pepper, and lemon juice.
  • Prepare marinade - Blend the marinade ingredients - cilantro, garlic, ginger, onions, salt, pepper, and oil into a food processor, blender, or mortar and pestle.
  • Pan - Line a baking tray with parchment paper or aluminum foil for easy clean-up. Spray or brush with oil to prevent the fish from sticking. Pro tip - make sure the fish is dry otherwise the marinade will slide down the fillets as soon as they are in the oven.
  • Marinate the fish - Place the fish on the baking tray and spread the marinade over the fish fillets evenly. Top each with a slice of lemon.Pro tip - Alternatively, you can add the fillets to the marinade bowl and leave them to marinate for an hour on the counter or overnight in the fridge
  • Bake - Bake in the preheated oven on the middle rack for 15 minutes or until the fish is cooked.

Baked Garlic Fish with Cilantro Lime Brown Rice image

Organic brown rice or germinated rice - use however much it says on the package for how many you're serving.
Homemade chicken stock
2 Tablespoons butter
Juice from one lime
1/2 cup butter
About 3-5 cloves garlic
Tilapia or whatever fish you like (1-2 pieces per person)
3-4 more limes for extra juices - see instructions
Sea salt to your taste
Ingredients to make this pesto
Extra cilantro (chopped, if desired)

Steps:

  • Start the rice - I make mine in homemade chicken stock, but you can use water if that's all you have (it's not as nourishing though). Stir in the lime juice and butter. This has to simmer, covered, about 50 minutes.
  • Meanwhile, melt the 1/2 cup butter in a saucepan. Mince fresh garlic into the bottom of a 9×13 baking dish. Pour the butter over the top. Lay whatever fish you'd like in the bottom. We used Tilapia. (UPDATE: Please read the comments about whether or not to buy farm-raised Tilapia!) Drizzle more lime juice on top and sprinkle with sea salt. Bake 35 minutes at 350*. (This should get done a little before the rice.)
  • While those are cooking, make the homemade pesto.
  • Also, chop fresh cilantro up small, I used about 2 big handfuls or so. (I threw some in the pesto, too.)
  • When the rice is done, add more fresh lime juice and sea salt to taste (I use a LOT: the juice from about 3-4 small limes, plus at least a teaspoon of sea salt), and then add the chopped cilantro and stir it all together.

1 (5 pound) whole trout
3 tomatoes, chopped
1 large onion, roughly chopped
2 lemons, juiced
1 small bunch cilantro sprigs
3 cloves garlic, halved
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon ground cinnamon
½ cup water
1 potatoes, cut into 1/4-inch slices, or more to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Drizzle a large oven-safe pan with oil.
  • Rinse trout and pat dry with a paper towel. Place on a flat work surface. Cut trout from one side through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book; lay onto the prepared pan.
  • Place tomatoes, onion, lemon juice, cilantro, garlic, coriander, cumin, salt, pepper, and cinnamon in a food processor. Pulse until chopped fine but not pureed. Pour 1/2 the mixture on top of 1/2 of the trout; fold the other side of trout on top. Spoon the remaining 1/2 of the mixture on and around the sealed trout. Add water to the pan; arrange potatoes around the trout. Cover pan with aluminum foil.
  • Bake in the preheated oven until trout flakes easily with a fork, about 45 minutes.

1 (2 1/2-pound) fish, such as snapper or bass, scaled, gutted and gills removed
Kosher salt
Extra-virgin olive oil
8 lemon slices
2 fresh bay leaves
1 bundle assorted fresh herbs, such as thyme, oregano, marjoram and parsley, plus some extra to lay the fish on while baking
4 cloves garlic, smashed
2 cups dry white wine

Steps:

  • Preheat the oven to 400 degrees F.
  • Make 3 diagonal slices about 1/2-inch deep on each side of the fish. Salt and olive oil the fish generously.
  • Season the inside of the fish with salt and olive oil. Place 4 lemon slices, the bay leaves, a bundle of the mixed herbs and 2 of the garlic cloves inside the body cavity.
  • Line a sheet tray with aluminum foil and arrange the remaining assorted herbs, lemon slices and garlic in the center of the tray and lay the fish on top.
  • Fold the aluminum foil up around the sides of the fish to create a sort of baking dish. Add the white wine and place in the preheated oven and roast until the fish is just cooked through, about 30 to 35 minutes.

2 limes, 1 zested, both cut in half
1/4 cup olive oil
1/2 cup rice vinegar
1 tablespoon honey
1 tablespoon grated fresh ginger, plus one 2-inch piece
1 tablespoon soy sauce
1 teaspoon fish sauce
Kosher salt and freshly ground black pepper
6 cups vegetable oil or neutral oil, for frying
1 jalapeno
Two 1 1/2- to 2-pound whole fish such as red snapper or striped bass
4 cups rice flour
1 tablespoon coriander seeds, toasted and ground
1 cup fresh cilantro leaves and small stems (plooms)
4 scallions, sliced on a bias and soaked in ice water

Steps:

  • Preheat a grill pan over medium-high heat. Add the limes cut-side down and cook until deeply charred, 5 to 8 minutes.
  • In a mixing bowl, whisk together the olive oil, rice vinegar, honey, grated ginger, soy sauce and fish sauce. Season with salt and pepper, then set aside.
  • Add the frying oil to a cast-iron skillet large enough so the oil comes no more than halfway up the skillet sides. Heat the oil over medium-high heat. Add the jalapeno and 2-inch piece ginger to the oil.
  • Place the fish on a cutting board and pat dry with paper towels. Make slashes crosswise on a diagonal along the body of the fish every 2 inches on both sides, cutting all the way down to the bone. Season the fish generously inside and out with salt. Mix together the rice flour, coriander, lime zest and 1 tablespoon salt in a shallow bowl. Dredge the fish in the seasoned rice flour.
  • When the oil is 350 degrees F, grip a fish firmly by the tail and carefully lower head-first into the skillet, making sure to lay it down away from you. Repeat with the other fish. Fry until the flesh on the bottom side is cooked through and the skin is deeply browned and crisp, about 4 minutes. While the fish are frying, baste the inside of the heads with hot oil periodically.
  • Use tongs and a fish spatula to carefully turn both fish over. Fry until the flesh on the second side is cooked through and the skin is deeply browned and crisp, about 4 minutes. Transfer to a wire rack and season both sides with more salt.
  • To serve: Place both fish on a platter. Spoon the ginger vinaigrette over the top and around the fish. Garnish with cilantro and scallions and place the grilled limes around the edges.

1 small whole fish like bass or red snapper (about 1 1/2-2 pounds)
4 tablespoons olive oil
Coarse salt and freshly ground pepper to taste
4 medium poblano chilies
1/2 small onion
1 clove garlic, minced
2 tablespoons cilantro
Lemon juice to taste

Steps:

  • Preheat oven to 375 degrees. Sprinkle fish inside and out with one tablespoon of olive oil, salt and pepper. Place on baking tray, set aside.
  • Prepare the chilies. Using rubber gloves to protect your hands from the volatile oils, seed and core the chilies and place them inside up on a broiler tray. Char the skins under the broiler, place the chilies in a paper bag for a couple of minutes and when they have cooled, scrape off the skin. Cut the chilies in slices.
  • Heat one tablespoon of olive oil in a skillet and cook the onion with the garlic until softened. Add the chilies and cook 5 to 10 minutes, until soft, stirring occasionally.
  • Roast the fish for about 20 minutes or until cooked.
  • Meanwhile, combine the cilantro (reserving some for garnish) with the onion-chili mixture, the remaining olive oil, lemon juice, salt and pepper and puree until smooth. Correct seasoning and set aside.
  • When the fish is cooked, place in a serving dish and spread with the cilantro-chili oil. Garnish with the cilantro and serve.

2 lbs cod fish fillets (4 fillets) or 2 lbs flounder fillets (4 fillets)
1/4 teaspoon pepper
