1 can (15 ounce) pumpkin puree
1 tablespoon canola oil
1/2 cup unsweetened applesauce
1/2 cup real maple syrup
2 teaspoons vanilla extract
1 cup whole wheat flour
1 cup all-purpose flour
2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon baking powder
1 cup pomegranate seeds, plus more for serving

Steps:

  • 1. Preheat the oven to 325 degrees F. Mist a 9x5 inch loaf pan with oil.2. Add the eggs, milk, pumpkin, oil, applesauce, maple syrup, and vanilla to a medium bowl and whisk until combined. 3.
