This is something my 9 year old and I came up with one night when we went to make dinner and the cupboard was bare! While certainly not gourmet food, it's a real kid pleaser, and I thought it wasn't too bad either. Quick and easy for a weeknight meal when you have little time and nothing thawed! Make it a little more zippy for adult tastes by adding cumin and chopped cilantro or a little curry if you'd like.

1/2 cup minced onion
6 hot dogs
1 (10 ounce) can chicken noodle soup
15 ounces water
1 cup frozen vegetables, of your choice
2/3 cup instant rice
1/4 cup ketchup
1/2 cup grated cheddar cheese

Steps:

  • Slice weiners into pieces and add all ingredients except the cheese to a 2 quart casserole dish, and mix well.
  • Cook in microwave until liquid is absorbed (approx 15 minutes or so).
  • Top with cheese and microwave it again until cheese is melted, or pop it into the oven if you want the cheese to be a little more crusty.

1 medium onion, diced
2 beef hot dogs (there would be 8 in a 1lb pkg)
1 (10 1/2 ounce) can vegetable soup, condensed
1 (10 1/2 ounce) can water
1/3 cup instant rice
1/4 teaspoon black pepper
1/4 cup fresh parsley, minced

Steps:

  • Preheat oven to 350°F.
  • Dice onion and add to a 2 qt casserole dish that has a lid.
  • Slice weiners into 1/2 inch thick coins and add to onion.
  • Mix soup into weiners & onion.
  • Add water and stir until soup is dissolved.
  • Add rice, black pepper, parsley & stir again.
  • Bake for 10 minutes with lid off.
  • Remove from oven & stir.
  • Bake for an additional 25-35 minutes with lid on.

1 Tbsp Flour
1/2 cup Grated Cheese
1 Onion Sliced
1 can Cream of mushroom or chicken soup
1 Tomato (Optinal)

Steps:

  • Slice potatoes into bottom of casserole dish. Add salt, pepper and flour. Cut wieners into 1/2 inch pieces; place on top of potatoes. Sprinkle with cheese and add onion. Pour soup over top. Place sliced tomatoes on top of soup. Sprinkle with more cheese. Bake at 360 for 1 1/2 hours.

1 ½ pounds veal cutlets
½ cup all-purpose flour
3 tablespoons grated Parmesan cheese
2 eggs
1 teaspoon minced parsley
½ teaspoon salt
¼ teaspoon pepper
1 pinch ground nutmeg
2 tablespoons milk
1 cup dry bread crumbs
6 tablespoons butter
4 slices lemon

Steps:

  • Place each veal cutlet between two pieces of plastic wrap, and pound with the flat side of a meat mallet until about 1/4 inch thick. Dip in flour to coat.
  • In a medium bowl, stir together the Parmesan cheese, eggs, parsley, salt, pepper, nutmeg and milk. Place bread crumbs on a plate. Dip each cutlet into the egg mixture, then press in the bread crumbs to coat. Place coated cutlets on a plate and refrigerate for 1 hour or overnight.
  • Melt butter in a large skillet over medium heat. Cook the breaded cutlets until browned on each side, about 3 minutes per side. Remove to a serving platter, and pour the pan juices over them. Garnish with lemon slices.

3 cups elbow macaroni (I prefer the jumbo kind)
1 pkg hot dogs
2 cans tomato soup
1 tsp ground mustard
1 tsp onion powder
4 cups shredded cheddar cheese, divided

Steps:

  • Preheat oven to 375°F. Begin boiling the noodles. While they are cooking, cut hot dogs into 1/2 inch slices.
  • When noodles are prepared, drain well, and pour into a large mixing bowl along with the cut-up hot dogs, tomato soup, ground mustard, onion powder and 2 cups shredded cheddar cheese. Mix well and pour into a greased 13x9 inch glass baking dish. Top with remaining 2 cups of cheese.
