2 tablespoons freshly squeezed orange juice
2 tablespoons raspberry vinegar
1/2 cup seedless green grapes, cut in half

Tips:

  • Selecting the Right Wild Rice: Choose whole grain wild rice for its higher nutritional value and distinct flavor. Look for plump and firm grains with no signs of breakage or discoloration.
  • Proper Cooking Method: For the best texture and flavor, cook wild rice using the absorption method. This involves simmering the rice in a specific ratio of water until all the liquid is absorbed.
  • Enhance the Flavor: Add aromatics like garlic, shallots, or herbs to the cooking liquid to infuse the rice with extra flavor. You can also add a splash of white wine or broth for a more complex taste.
  • Cooling the Rice: After cooking, spread the wild rice on a baking sheet and let it cool quickly to prevent overcooking and maintain its texture.
  • Preparing Asparagus: Select fresh, vibrant asparagus spears with tightly closed tips. Trim the woody ends and cut the spears into bite-sized pieces.
  • Cooking the Asparagus: To preserve its bright green color and crisp texture, blanch the asparagus in boiling water for a few minutes, then immediately transfer it to an ice bath to stop the cooking process.
  • Creating a Flavorful Dressing: Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make a tangy and flavorful dressing for the salad.
  • Combining Ingredients: In a large bowl, combine the cooked wild rice, asparagus, red onion, parsley, and walnuts. Pour the dressing over the salad and toss to coat evenly.
