1 pound sweet Italian sausage
¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

16 lasagna noodles (about 12 ounces, or enough for 4 layers in a 9-by-13-inch baking dish)
2 containers (15 ounces each) part-skim ricotta cheese
1/4 cup chopped fresh flat-leaf parsley (optional)
1 large egg
Extra-virgin olive oil, for coating
Basic Meat Sauce
1 pound part-skim mozzarella, coarsely grated (4 cups)
4 ounces finely grated Parmesan cheese (1 cup)

Steps:

  • Preheat oven to 400 degrees. Bring a large pot of water to boil. Generously salt water; add noodles and cook according to package directions. Drain, and rinse with cold water. Lay noodles on a baking sheet, separating layers with parchment or waxed paper.
  • In a medium bowl, combine ricotta, parsley, and egg. Season with 1 1/2 teaspoons salt and 1/4 teaspoon pepper.

This is not low fat, and is nothing but pure comfort food. Serve with yummy garlic bread and a salad. It also includes 8 hours of sitting time for the sauce, but I think everyone knows how much better Italian tastes the day after. This 8 hours of sitting lets the sauce develop. The cook time does not include the 8 hours of chilling time, so plan for that! I make the meat sauce the day before, and assemble the next day.

1 lb hot Italian sausage
1/2 lb ground chuck
1/2 cup green onion, minced
3 garlic cloves, crushed
3 -4 tablespoons olive oil
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1/4 teaspoon dried whole oregano
1 dash of dried whole basil
1/2 teaspoon salt
1/4 teaspoon black pepper, freshly ground
2 cups monterey jack cheese, shredded and divided (not pepper jack, just regular jack!)
1 cup ricotta cheese
1 cup cottage cheese
1/2 cup green onion, minced
1/2 cup fresh parsley, minced
1 egg, beaten
1/2 teaspoon dried whole basil, crushed
1/2 teaspoon dried whole marjoram, crushed
7 slices bacon
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 cup parmesan cheese, freshly grated (not in the can...freshly grated)
1/2 cup soft breadcrumbs (put a couple of slices of bread in a mini food processor)
1 egg yolk
2 tablespoons olive oil (optional)
5 cooked lasagna noodles
1 (8 ounce) package sliced swiss cheese

Steps:

  • Remove the sausage from the casings. Cook the sausage, ground chuck, 1/2 cup green onions, and garlic in 3-4 tbsp olive oil in a large skillet until the meat is browned, stirring to crumble the meat; drain. Add the tomato sauce, tomato paste, 1/4 tsp oregano, dash of basil, salt and pepper; stir well. Bring to a boil; cover, reduce heat, and simmer for 30 minutes, stirring frequently.   • Combine the Monterey Jack cheese, ricotta cheese, cottage cheese, 1/2 cup minced green onions, parsley, beaten egg, basil, and oregano in a medium bowl; stir well, and set aside.
  • Cook the bacon until crisp; crumble the bacon. Combine the bacon, spinach, Parmesan cheese, breadcrumbs, egg yolk, and if desired, 2 tbsp olive oil.
  • Spoon half of the reserved meat sauce in a lightly greased 13 x 9 x 2 inch baking dish. Layer half of the reserved ricotta cheese mixture over the meat sauce; top with half of the spinach mixture. Arrange the noodles evenly over the spinach mixture. Repeat layers with half of the meat sauce, ricotta cheese mixture, and spinach mixture.
  • Sprinkle the remaining 1 cup of Monterey Jack cheese evenly over the lasagna mixture; top evenly with Swiss cheese slices.
  • Bake at 350 degrees for 40 to 45 minutes or until the cheese melts and the mixture is hot and bubbly.
