Time 7h15m

Yield 6 servings

Number Of Ingredients 7

Three 2 1/2-pound frying chickens, split
4 tablespoons salt
1 cup cider vinegar
3/4 cup peanut oil
1 teaspoon hot sauce, such as Tabasco
1/8 teaspoon black pepper
1 teaspoon cayenne pepper

Steps:

  • For the chicken: Put the chicken halves in a very large bowl or deep pot and cover with water. Sprinkle 3 tablespoons of the salt in the water, cover and refrigerate the chickens for 6 hours or overnight.
  • For the BBQ sauce: In a saucepan, mix together the vinegar, remaining tablespoon salt, peanut oil, hot sauce, black pepper, 1/4 cup water and cayenne. Bring this mixture to a boil, stir well and remove from the heat.
  • Drain the chicken, pat dry and place the halves on the grill, skin side up. Baste with the sauce and cook for 30 minutes. Turn the chickens skin side down and baste the top with sauce. Continue to grill the chickens for an additional 30 minutes, turning and basting the chicken every 10 minutes. Check for doneness by twisting a drumstick; it should move easily.

1 tablespoon vegetable oil
3 cloves garlic, minced
1 medium onion, finely chopped
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 1/2 cups ketchup
1/4 cup apple cider vinegar
2 tablespoons unsalted butter
1 tablespoon Worcestershire sauce
3 1/2 pounds chicken legs and thighs
Kosher salt and freshly ground black pepper

  • Pat the chicken dry and season all over with salt and pepper. Arrange the chicken skin-side down on a rimmed baking sheet. Pour the barbecue sauce over the chicken and cover with foil. Bake about 25 minutes. Remove the foil and continue to bake until the chicken is beginning to brown in spots, about 15 minutes. Tips:

  • Prepare the chicken: Rinse the chicken breasts or thighs under cold water and pat them dry with paper towels. Remove any excess fat or skin.
  • Use a flavorful marinade: Combine olive oil, lemon juice, garlic, herbs, and spices in a large bowl. Add the chicken to the marinade and stir to coat. Cover and refrigerate for at least 30 minutes, or up to overnight.
  • Preheat the oven: Set your oven to 400°F (200°C) before you start cooking the chicken. This will help ensure that the chicken cooks evenly.
  • Arrange the chicken on a baking sheet: Place the marinated chicken on a foil-lined baking sheet. Make sure that the chicken is not touching each other.
  • Bake the chicken: Bake the chicken in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C). If you want crispy skin, broil the chicken for a few minutes at the end of cooking.
  • Let the chicken rest: Remove the chicken from the oven and let it rest for 5-10 minutes before serving. This will help the juices redistribute throughout the chicken.

Conclusion:

Woods Baked B-Q Chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal or a backyard barbecue. The marinade infuses the chicken with flavor, and the baking process ensures that it is cooked evenly and juicy. You can serve the chicken with your favorite sides, such as mashed potatoes, roasted vegetables, or coleslaw.
