8 bakery hot dog buns, split and toasted
1/4 cup chopped red onion
2 cups sauerkraut, rinsed and well drained

4 slices center-cut bacon
2 hot dog buns
1 medium jalapeno pepper, seeded and sliced, or to taste

1 poblano pepper, stem and seeds removed, cut lengthwise into 6 strips
