1 (12 ounce) bottle beer (dark)
1 tablespoon seeded and minced jalapeno pepper
3 garlic cloves, crushed through a press
2 teaspoons five-spice powder
1/2 teaspoon salt
8 (1/4 lb) skinless chicken drumsticks

Steps:

  • Combine 1 cup of the beer, jalapeño pepper, garlic, five spice powder, and salt in a zip-lock bag.
  • Add the chicken, squeeze out the air and seal the bag.
  • Turn to coat the chicken.
  • Refridgerate, turning the bag occasionally, 2 hours or overnight.
  • Spray broiler rack with nonstick spray and preheat broiler.
  • Transfer chicken to broiler rack, discard marinade.
  • Broil chicken 5 inches from heat, turning occasionally and basting with remaining 1/2 cup beer, until thermometer reads 180*F, about 20 minutes.
  • 3 points per serving (2 drumsticks).

This is from the Weight Watchers New Complete cookbook. Another one of my favorites. These are just like the teriyaki beef strips you get in Chinese restaurants. Oh so yummy and good for you too! Great with rice.

3 scallions, sliced
2 tablespoons reduced sodium soy sauce
1 tablespoon fresh gingerroot, grated peeled
1 tablespoon rice wine vinegar
2 teaspoons dark sesame oil
1 teaspoon balsamic vinegar
1/2 teaspoon fresh ground pepper
1 garlic clove, minced
3/4 lb beef tenderloin, cut into 16 strips

Steps:

  • Preheat a grill. If you are using wooden skewers, soak in water 30 minutes.
  • In a gallon size sealable plastic bag, combine all of the ingredients, including the beef. Seal the bag, squeezing out the air. Marinate 15 minutes.
  • With tongs, remove the beef from the marinade; discard the remaining marinade. On each of 16, six-inch, metal or wooden skewers, thread one beef strip, piercing the beef in several places.
  • Grill until cooked through, about 5 minutes on each side.
  • Serve with either chinese mustard, duck sauce and/ or soy sauce to dip the skewers inches.

3 tablespoons fresh lemon juice
1 teaspoon olive oil
2 large garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon table salt
1/2 teaspoon dried oregano
2 lbs boneless skinless chicken breasts
12 medium jalapeno peppers, halved lengthwise, seeded (do not touch seeds with bare hands)
olive oil flavored cooking spray (5 one-second sprays per serving)

Steps:

  • Combine orange and lemon juices, oil, garlic, cumin, paprika, salt and oregano in a resealable plastic food storage bag.
  • Add chicken and peppers; seal bag and turn to coat.
  • Place bag on a plate on the bottom shelf in refrigerator and marinate for 2 to 8 hours.
  • Preheat grill or grill pan.
