YAKITORI NEGIMA

Yakitori Negima image

Yakitori negima is one of the more popular iterations of the made-to-order grilled chicken skewers commonly enjoyed with a cold beer at bars in Japan. Featuring chicken and scallion pieces, this version calls for brushing the skewers with a sweet soy glaze (tare or teriyaki) that turns nice and caramelized on the grill. Here we call for a grill or grill pan but you can also cook them under a heated broiler or over the low coals of a campfire, turning them frequently and watching carefully to avoid scorching. You'll want to use paddle-type skewers, which are flatter than the usual kind and easier to turn; look for them at Japanese markets and online.

Time 1h

Yield Six 10-inch skewers

Number Of Ingredients 10

1/2 cup tamari or low-sodium soy sauce
1/2 cup mirin
1/4 cup sake
1/4 cup packed light brown sugar
1 clove garlic, finely grated
One 3/4-inch piece fresh ginger, finely grated
2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
2 bunches scallions, white and light green parts cut into 1-inch pieces
Vegetable oil, for the grill grates
Kosher salt

Steps:

  • Soak six 10-inch bamboo paddle skewers in water for 30 minutes.
  • Meanwhile, combine the tamari, mirin, sake, brown sugar, garlic and 1/4 cup water in a small saucepan and bring to a boil over medium-high heat. Cook, stirring frequently, until slightly thickened and reduced by about half, 12 to 15 minutes. Remove from the heat and stir in the ginger. Let cool, then remove 1/4 cup for glazing and set aside the remaining for serving. (The teriyaki glaze can be refrigerated, covered, up to a day before using.)
  • Prepare a grill or grill pan for medium-high heat. Lightly coat the hot grates or pan with vegetable oil.
  • Thread each skewer with 7 to 8 pieces each of the chicken and scallions, alternating between the two.
  • Place the skewers on the grill and lightly sprinkle each with salt. Cook, continuously turning the skewers, until the scallions are tender the chicken is browned and cooked through, about 12 minutes.
  • Brush some of the reserved1/4 cup of glaze all over each skewer. Continue to grill, continuously turning, until the glaze is slightly caramelized, 3 to 4 minutes. Serve with the reserved teriyaki sauce.

CHICKEN YAKITORI

Chicken Yakitori image

Yakitori literally means "grilled chicken," so you don't need to call it chicken yakitori. But you can also add seasonal vegetables to these Japanese skewers.

Provided by Sonoko Sakai

Yield Serves 4

Number Of Ingredients 15

½ cup sake
6 Tbsp. plus ½ tsp. mirin
2½ Tbsp. cane sugar
1 cup (480 ml) soy sauce or usukuchi shoyu (light-colored soy sauce)
2 lb. skin-on, boneless chicken thighs, cut into bite-size pieces
4 Tokyo negi onions, white parts only, or scallions, white and light green parts cut crosswise into 2" slices
½ cup olive oil or untoasted sesame oil
8 fresh shiitake mushrooms, stems trimmed
2 dozen shishito peppers, stems trimmed
12 fava beans (in the shell)
12 quail eggs, boiled for 2-3 minutes, shocked in cold water, and peeled
Shichimi togarashi
Sansho pepper
Yuzu kosho
Sea salt

Steps:

  • Soak bamboo skewers in water for 20 minutes (or use metal skewers).
  • While the skewers soak, make the shoyu tare. Combine the sake, mirin, and sugar in a small saucepan over medium heat and cook until the sugar is completely dissolved. Reduce heat, then stir in 1 cup soy sauce. Heat until just simmering, about 3 minutes, then remove from heat and let cool to room temperature. The shoyu tare can be stored in a nonreactive glass or metal container in a cool, dry place or the refrigerator for about 3 months.
  • Skewer 2 or 3 pieces of chicken and 2 or 3 pieces of onion, alternating, on each skewer. Start with the larger pieces of meat so they end up at the tip, which will cook more quickly. Make sure there are no gaps between the meat and onions, as bamboo skewers will burn in the gaps. Skewer the vegetables and eggs on their own skewers, about 3 or 4 pieces per skewer, depending on the size of the vegetables.
  • Heat a bichotan (or charcoal fire) grill, or heat a gas grill to medium-high, or preheat the broiler. Lightly baste the chicken with the oil. Grill the chicken and onions for 3-4 minutes, turning the skewers several times, until the chicken and onions begin to char. Remove the chicken from the heat and baste with the shoyu tare.
  • Return the chicken to the heat and cook for 2 more minutes, turning the skewers several times. Remove from heat and baste again. Repeat one more time, until the chicken is cooked through and slightly charred, about 8-10 minutes total. Lay the skewered vegetables and quail eggs on the grill and brush them with oil. Grill the vegetables and eggs, turning them over several times, until the vegetables are soft and charred, 5-8 minutes (the vegetables have different cooking times, so monitor each type for desired doneness). Brush them with the shoyu tare or season them at the table.
  • Serve the chicken, eggs, and vegetables with shichimi togarashi, sansho pepper, yuzu kosho, and salt.

Tips:

  • Choose high-quality ingredients: Use fresh, flavorful chicken thighs and green onions for the best results.
  • Marinate the chicken: Marinating the chicken in a mixture of soy sauce, sake, mirin, and ginger adds flavor and helps tenderize the meat.
  • Skewer the chicken and green onions properly: Alternate the chicken and green onions on the skewers, making sure that the pieces are evenly spaced.
  • Grill the yakitori over medium heat: This will help prevent the chicken from drying out and burning.
  • Baste the yakitori with the marinade: Basting the yakitori with the marinade while it grills helps keep it moist and flavorful.
  • Serve the yakitori hot: Yakitori is best served hot off the grill, with a sprinkle of salt and a squeeze of lemon.

Yakitori negima is a delicious and easy-to-make Japanese dish that is perfect for a quick and easy meal or a fun party appetizer.
