YELLOW ANGEL FOOD CAKE
Very old recipe from Darlene Kossmma. Made when they made angel food cakes I'm sure. This looks to be a very light cake.

Steps:
- Beat water and egg yolks and salt for 15 minutes
- Fold in sugar and lemon extract
- Sift dry ingredients together 5 times
- Fold into egg mixture
- Bake as for angel food cake (I'm guessing 325°F for 30 minutes).
Tips:
- Proper Ingredient Measurement: For precise baking results, use a kitchen scale to accurately measure ingredients like flour, sugar, and butter. Measuring cups can vary in accuracy, leading to inconsistent outcomes.
- Room Temperature Ingredients: Before starting, ensure your butter, eggs, and milk are at room temperature. This allows them to blend smoothly, resulting in a more uniform and well-textured cake.
- Creaming Method: When creaming butter and sugar together, do not rush the process. Cream them until light and fluffy, incorporating plenty of air. This step is crucial for creating a tender and airy cake.
- Folding Egg Whites: When folding egg whites into the batter, use a gentle hand and a spatula. Over-mixing can deflate the egg whites, resulting in a dense cake.
- Baking Temperature: Pay close attention to the oven temperature. A slightly lower temperature (325°F or 163°C) for a longer baking time is preferable to a higher temperature for a shorter time. This helps prevent the cake from browning too quickly while ensuring it cooks evenly throughout.
Conclusion:
With careful attention to detail and a commitment to using quality ingredients, you can create a stunning and delicious yellow angel cake that will impress your friends and family. The delicate crumb, light texture, and sweet flavor of this classic cake make it a timeless favorite. Whether enjoyed as a simple dessert or adorned with frosting and decorations, the yellow angel cake is a versatile and delightful treat that is sure to bring joy to any occasion.
