Until now I've only seen chocolate cake in a mug recipes, and so I figured I'd put one up for those who just don't like chocolate. Also, this recipe can be modified and you can add in anything that you want to.

a2 tbsp flour
1.5 tbsp sugar
1/4 tsp baking powder
1/8 tsp salt
2 tbsp milk
3/4 tbsp oil
1/4 tsp vanilla extract
Pam cooking spray

Steps:

  • Mix all of the dry ingredients together.
  • Now add in the milk, oil and vanilla.
  • Spray a little bit of PAM into your coffee mug.
  • Pour the batter into mug.
  • Bake in microwave at high power for 1 minute.
  • If the cake is not completely cooked, bake for 15 second intervals until it is done.

Steps:

  • Melt butter (microwave for about 30 seconds) in a small ball whisk together Butter and Egg. Stir in Milk, Vanilla, and Sugar. Once completely mixed add the flour and salt, then beat until smooth. Pour into your mug(s), keep it JUST below the half way point of the mug you don't want it to over flow when heating. Microwave for about 1:45 - 2:30 depending on your microwave. 1 (3.4 ounce) package instant vanilla pudding mix
2 ⅔ cups confectioners' sugar
¼ cup powdered lemonade mix

Steps:

  • Check your coffee mugs to make sure each one holds 1 1/2 cups water.
  • Place dry cake mix and dry pudding mix into a large bowl and blend well with a whisk. This will be about 4 to 4 1/2 cups of dry mix and will make 8 coffee cup cake mixes. Divide mix into 8 small plastic bags (about 1/2 cup each). Place mix into a corner of each bag and tie it there with a twist tie.
