YUMMY ZUCCHINI COFFEE CAKE
The first time I made this, I gave some to my daughter, who hates zucchini, and she said it was the best thing I ever made! It has been an excellent and wholesome way to use up all of the zucchini from my garden. If using thawed shredded zucchini, make sure to drain very well. -Tammy Kirsch, Arcade, New York

Tips:
- Room temperature ingredients: Always bring your ingredients to room temperature before baking. This will help them combine more evenly and create a smoother batter.
- Measure your ingredients correctly: Use a kitchen scale for the most accurate measurements. If you don't have a scale, be sure to level off your measuring cups.
- Don't overmix the batter: Overmixing can make the coffee cake tough. Mix just until the ingredients are combined.
- Line your baking pan: Use parchment paper or a nonstick spray to line your baking pan. This will help the coffee cake come out of the pan easily.
- Bake the coffee cake until a toothpick inserted into the center comes out clean: This is the best way to test if the coffee cake is done baking.
