YUMMY POT ROAST
I rarely make my pot roast the same, but this one turned out so well I wrote it down. It also makes it's own gravy.

Steps:
- 1. Salt and pepper the meat, then dredge the meat in flour. Brown the meat in olive oil to seal in the flavor. The flour also helps to make a gravy out of the juices.
- 2. Place the meat in a crock pot that is set on high.
- 3. Add all ingredients except the carrots and mushrooms and and bring to a simmer, reduce the heat to low and cook for 4-5 hours. In the last hour add the mushrooms and carrots.
- 4. I like to serve it with mashed potatoes and a green vegetable.

Steps:
- 1. Gather all ingredients.
- 2. Put a crockpot liner into crockpot.
- 3. Half red potatoes and put into crockpot.
- 4. Add whole carrots to crockpot.
- 5. Add 2 quartered onions to crockpot.
- 6. Place pot roast on top of veggies. Salt & pepper to taste.
- 7. Boil 1 quart of water on the stove.
- 8. Add two tablespoons of beef base. Dissolve base in water.
- 9. Add the beef base to the crockpot. You can use beef stock instead of beef base but make it a really good stock.
- 10. Add one sprig of Rosemary.
- 11. Set crockpot to low and cook 6-8 hours.
Tips:
- Choose the right cut of beef: Chuck roast, rump roast, and brisket are all good choices for pot roast.
- Brown the beef before braising: This will help develop flavor and color.
- Use a flavorful braising liquid: Beef broth, red wine, and beer are all good options.
