Yield 10 serving(s)

Number Of Ingredients 11

6 medium potatoes
1 1/2 cups mayonnaise or 1 1/2 cups salad dressing
1 tablespoon white vinegar
1 tablespoon mustard
1 teaspoon salt
1/4 teaspoon pepper
2 stalks celery, chopped
4 radishes, chopped in small pieces
3 green onions, chopped
2 carrots, grated
4 hard-boiled eggs

Steps:

  • Heat salted water to boiling; add potaotes.
  • Cover and heat to boiling; reduce heat.
  • Cook until tender; drain.
  • Cool slightly and then cut into cubes.
  • Mix mayonnaise, vinegar, mustard, salt and pepper together in a large bowl.
  • Add veggies, potatoes and eggs; toss.
  • Cover and refridgerate at least 4 hours to blend flavors.
  • **Isometimes vary my mustard- creole flavor, ceasar flavor, dijon, etc for a different taste!

Tips:

  • Boil the potatoes until they are tender but still hold their shape. Overcooked potatoes will become mushy and fall apart in the salad.
  • Chill the potatoes before assembling the salad. This will help them absorb the flavors of the dressing.
  • Use a variety of fresh herbs in the dressing. This will give the salad a bright, flavorful taste.
  • Don't be afraid to experiment with different ingredients. You can add chopped vegetables, hard-boiled eggs, or even cooked bacon to the salad.
  • Serve the potato salad immediately or chill it for later. It will keep in the refrigerator for up to 3 days.
