Time 25m

Yield Makes about 20

Number Of Ingredients 10

2 medium zucchini (about 8 ounces each), trimmed
1 medium onion
1/2 cup grated Pecorino Romano cheese (1 ounce)
1/3 cup all-purpose flour
1/2 cup finely chopped fresh flat-leaf parsley
1 teaspoon finely chopped fresh oregano
Coarse salt and freshly ground pepper
2 large eggs, lightly beaten
Extra-virgin olive oil, for frying
Plain yogurt and apricot jam, for serving

Steps:

  • Grate zucchini on the large holes of a box grater, then squeeze dry in a clean kitchen towel or press in a ricer. Repeat with onion.
  • Mix together zucchini, onion, cheese, flour, and herbs. Season with 1 teaspoon salt and 1/4 teaspoon pepper. Stir in eggs just before frying.
  • Heat a medium skillet over medium-high heat. Working in batches, coat skillet with 1 to 2 tablespoons oil. Scoop mounds (2 tablespoons each) of the zucchini mixture into skillet; flatten slightly using a spatula. Cook until golden brown and cooked through, 2 to 3 minutes per side.
  • Transfer fritters to paper-towel-lined plates to drain. Serve with dollops of plain yogurt and apricot jam.

Tips:

  • Choose the Right Zucchini: Select firm and young zucchini with no blemishes or bruises. Larger zucchinis tend to have more seeds, so smaller or medium-sized ones are better for fritters.
  • Grate the Zucchini Properly: Use the large holes of a box grater to create long, thin zucchini strands. This helps them hold their shape better during cooking.
  • Squeeze Out Excess Moisture: After grating the zucchini, use a cheesecloth or paper towels to squeeze out as much excess moisture as possible. This prevents the fritters from becoming soggy.
  • Use a Nonstick Skillet: A nonstick skillet is ideal for cooking zucchini fritters as it prevents them from sticking and ensures even cooking.
  • Cook Over Medium Heat: Maintain medium heat when cooking the fritters to allow them to cook evenly without burning.
  • Flip Carefully: Use a spatula to gently flip the fritters once they are golden brown on one side. Avoid flipping too frequently, as this can break them apart.
  • Serve with Dipping Sauce: Serve the fritters with your favorite dipping sauce, such as ranch dressing, tzatziki sauce, or marinara sauce, to enhance their flavor.

Conclusion:

Zucchini fritters are a delectable and versatile dish that showcases the goodness of zucchini. Whether served as an appetizer, side dish, or main course, these fritters are sure to please. With their crispy exterior and tender interior, they offer a delightful combination of textures and flavors. Experiment with different herbs, spices, and fillings to create your own unique variations of this classic recipe. From savory to sweet, the possibilities are endless. So, embrace the bounty of zucchini season and indulge in the deliciousness of these golden-brown fritters. Happy cooking!
