ROASTED GARLIC MASHED POTATOES
Steps:
- Preheat the oven to 450 degrees F.
- Place the garlic on a pie pan and drizzle with olive oil. Season with salt and pepper. Place in the oven and roast for 35 to 40 minutes, or until tender and golden brown. Remove from the oven and cool. Squeeze or remove the garlic cloves from the head and place in a small bowl. Using a fork, mash the garlic until smooth. Place the potatoes in a pot of salted water and bring to a boil. Reduce the heat to a simmer and cook the potatoes until fork tender, about 12 to 15 minutes.
- Remove the pan from the heat and drain. Place the potatoes back in the pot and return to the heat. Stir the potatoes, constantly, for 2 to 3 minutes to dehydrate the potatoes. Remove the potatoes from the heat. Add the garlic and butter. Using a hand-held masher, mash the butter and garlic into the potatoes. Add enough cream until desired texture is achieved. The potatoes should still be sort of lumpy. Season the potatoes with salt and pepper.

Tips:
- Choose the right potatoes: Yukon Gold or Russet potatoes are the best choices for mashed potatoes. They have a high starch content, which makes them creamy and smooth.
- Roast the garlic before mashing it: Roasting the garlic mellows its flavor and makes it sweeter. This also helps to bring out the garlic's natural oils, which add a rich flavor to the mashed potatoes.
- Use a potato ricer: A potato ricer is the best tool for getting smooth and creamy mashed potatoes. It helps to break down the potatoes into small, even pieces that will easily absorb the butter, milk, and seasonings.
- Don't overwork the potatoes: Overworking the potatoes will make them gluey. Mash them just until they are combined and smooth.
- Season to taste: Add salt, pepper, and other seasonings to taste. You can also add herbs, such as rosemary, thyme, or chives, for extra flavor.
Conclusion:
Roasted garlic mashed potatoes are a delicious and easy side dish that is perfect for any occasion. They are creamy, smooth, and full of flavor. With just a few simple ingredients, you can make a dish that will impress your family and friends. So next time you are looking for a side dish that is both delicious and easy to make, give roasted garlic mashed potatoes a try. You won't be disappointed!
