1 cup sliced sweet onion
1/2 cup oil-packed sun-dried tomatoes, chopped

  • In a Dutch oven, heat oil over medium heat. Add onion; cook and stir until tender, 3-4 minutes. Steps:

  • Bring a large pot of water to a boil.
  • Add green beans, return to a boil and cook 1 minute; the beans should still be crisp. Drain the beans; don't rinse.
  • In a large skillet or wok, add oil. Heat until very hot (the skillet is ready when a drop of water in the oil sizzles). Add beans and cook about 1 minute, turning often with tongs or spatula. 1 tablespoon kosher salt, plus more to taste
1 lb fingerling potato
olive oil, to taste
2 teaspoons freshly ground black pepper, plus more to taste
3 tablespoons McCormick® Zesty Spice Blend, divided
4 halibut fillets, about 1 inch (2.5 cm) thick
2 lb green beans, stems trimmed
½ cup fresh basil, finely chopped
1 lemon zest
1 lemon juice
¼ cup extra virgin olive oil
kosher salt, to taste
freshly ground black pepper, to taste

Steps:

  • Preheat the oven to 450˚F (230˚C). Arrange the oven racks the top third and bottom third of the oven.
  • Bring a large pot of salted water to a boil. Add the potatoes and cook until fork-tender, about 20 minutes, then drain.
  • Transfer the potatoes to a rimmed baking sheet and gently smash so they flatten halfway. Drizzle a generous amount of olive oil over the potatoes, then season with salt, pepper, and 1 tablespoon of the Zesty spice blend. Spread on a baking sheet and set aside.
