1-1/2 teaspoons salt, divided
1/2 cup olive oil
1/4 cup lemon juice

1 medium sweet red pepper, finely chopped
1/2 small red onion, finely chopped
1/3 cup Greek olives, pitted and chopped
4 bacon strips, cooked and crumbled
1/2 cup crumbled feta cheese
1/4 cup loosely packed basil leaves, torn

Steps:

  • Place potatoes in a large saucepan; add water to cover. Add 1 teaspoon salt. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-10 minutes. 1 1/2 lbs potatoes, Yukon Gold about 5 medium unpeeled
1/4 cup vinegar, red wine vinegar
1/2 teaspoon sugar
1/2 onions or 1/2 red onion, very thinly sliced
1/4 cup olive oil, extra-virgin
2 tablespoons parsley, chopped

  • Cook potatoes in large pot of boiling salted water until tender, about 30 minutes. Drain. Cool to just warm, 10 to 15 minutes; peel potatoes. Cut each potato in half, then cut into 1/3-inch slices.

1/4 c spanish olives, finely chopped

MAYONNAISE DRESSING
1/4 c mayonnaise
1/2 - 1 Tbsp sherry vinegar
1 Tbsp lemon juice, fresh
1 Tbsp coarse mustard
1/2 tsp paprika, smoked
1/8 tsp garlic salt & onion salt
1/4 tsp fresh ground black pepper
small drizzle virgin olive oil
GARNISHES
1 large hard boiled egg, peeled, chilled, sliced
1 Tbsp fresh parsley, finely chopped
1/2 - 1 Tbsp fresh cilantro, finely chopped, optional
6 black olives, quartered
1/2 tsp paprika, for sprinkling

1/4 cup red wine vinegar
1 tablespoon dijon mustard
Kosher salt
1 1/2 cups neutral-flavored oil (such as vegetable, canola or peanut)
2 1/2 pounds small red bliss potatoes, quartered
3 cloves garlic, smashed
Kosher salt
6 slices bacon, chopped
2 tablespoons extra-virgin olive oil
1 red onion, diced
3 stalks celery, diced
1/2 cup red wine vinegar
1/2 cup dijon mustard

Steps:

  • Make the mayonnaise: Put the egg yolks in a food processor and add the vinegar, mustard and 1/4 teaspoon salt. Turn on the machine and very slowly start to drizzle in the oil (drip until the mixture starts to look like mayonnaise, then you can start adding it in a slow, steady stream). If the mayonnaise is too thick, add a few drops of water; if it is not thick enough, add a little more oil with the motor running.
