3 cups zucchini, sliced
1 cup Bisquick baking mix
1/2 cup onion, finely chopped
1/2 cup parmesan cheese, grated
2 tablespoons chopped parsley
1/2 teaspoon salt
1/2 teaspoon seasoning salt
1/2 teaspoon dried marjoram or 1/2 teaspoon oregano
1 dash pepper
1 clove garlic, minced
1/2 cup vegetable oil
4 eggs, beaten

Steps:

  • Mix all ingredients together.
  • Spread into a greased 13 x 9 inch pan.
  • Bake at 35o degrees for 25 minutes or until golden brown.
  • Cut into 2x1 inch pieces.
  • Serve hot.

¼ cup seasoned bread crumbs
¼ cup grated Parmesan cheese
⅛ teaspoon salt
ground black pepper to taste
2 medium zucchini, sliced 1/4-inch thick
1 tablespoon olive oil

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Coat a baking sheet with cooking spray.

3 c thinly sliced uncooked zucchini (about 4 small)
1 c bisquick baking mix
1/2 c finely chopped onion
1/2 c grated parmesan cheese
2 Tbsp parsley flakes or fresh snipped
1/2 tsp salt
1/2 tsp oregano, dried
1 clove garlic finely chopped
1/2 c vegetable oil
4 eggs, slightly beaten
dash of pepper
