STIR-FRIED ZUCCHINI AND BEEF
My version of a recipe from a book titled Quick & Easy Korean Cooking for Everyone, via RecipeSource.com. The recipe originally called for cucumbers instead of zucchini; somehow I bought the zucchinis instead (I know, I know...) and I loved the end result, so here it is! The directions are a little vague, but I am a beginner cook and managed just fine. Enjoy over rice, with Sriracha.

ZUCCHINI-BEEF CASSEROLE
I am adding another zucchini recipe from the past. I have long forgotten exactly where it came from. Actual prep time will depend on how much time you spend shredding your cheese. Save money and shred you own. Save time and buy it already shredded.

Tips:
- Use a variety of zucchini. Green zucchini, yellow zucchini, and pattypan squash can all be used in this recipe. If you are using a larger zucchini, you may need to cut it into smaller pieces.
- Brown the beef well. This will help to develop flavor and prevent the beef from becoming dry.
- Don't overcook the zucchini. Zucchini cooks quickly, so it's important to keep an eye on it and remove it from the pan as soon as it is tender-crisp.
- Use a good quality cheese. A sharp cheddar cheese or a flavorful mozzarella cheese will help to take this dish to the next level.
- Serve immediately. This dish is best when served hot and fresh out of the oven.
Conclusion:
Zucchini beef bake is a quick, easy, and delicious meal that is perfect for a busy weeknight. It's also a great way to use up leftover zucchini. This dish is sure to become a family favorite.
