The batter comes together quickly and you can feel good about eating zucchini for breakfast. Make sure you wring out as much water from the shredded zucchini as possible to prevent the pancakes from getting soggy.

1/3 cup walnuts
1 large zucchini (about 12 ounces)
3/4 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup buttermilk, at room temperature
1/3 cup dark brown sugar
2 tablespoons unsalted butter, melted and cooled slightly
1 teaspoon pure vanilla extract
1 large egg, at room temperature
Vegetable oil, for the skillet
Salted butter, for serving
Maple syrup, for serving

  • Preheat the oven to 200 degrees F and set a wire rack inside a rimmed baking sheet.
