1 cup biscuit baking mix
¼ cup grated Parmesan cheese
½ teaspoon garlic powder
½ teaspoon seasoning salt
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon dried parsley
¼ cup grated onion
4 eggs
⅓ cup vegetable oil
2 zucchini, thinly sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan.
  • In a large bowl, combine baking mix, cheese, garlic powder, seasoning salt, oregano, salt, pepper and parsley. Stir in onion, eggs and oil; stir well. Stir in zucchini. Pour batter into prepared pan.
  • Bake in preheated oven for 25 to 30, until a toothpick inserted into center of the loaf comes out clean.

1 tablespoon olive oil
1/4 teaspoon red pepper flakes
1 small onion, chopped
1 1/2 pounds zucchini, finely chopped (about 3 medium)
1 can cannellini beans (10 oz.), rinsed and drained
8 eggs
1/2 cup fresh basil, chopped (or 2 tablespoons dried)
1 cup parmesan cheese, grated
1 pound ripe tomatoes, sliced (about 3 medium)
kosher salt and freshly ground pepper, to taste

Steps:

  • 1.Preheat oven to 400º F and lightly grease a 9x13-inch baking dish. 2.Heat olive oil in large skillet over medium heat and sauté onion and zucchini until tender. Stir in red pepper flakes, and season generously with salt and pepper. 3.Add beans, then stir until well combined and heated through. Transfer veggie mixture to baking dish and top with sliced tomatoes. 4.Whisk together eggs, salt, pepper, basil and shredded cheese in a large bowl. Pour mixture over the casserole ingredients. 5.Place baking dish in oven and bake for 30 minutes, or until egg is set, and casserole is lightly browned and puffy. Remove from oven and serve hot

3 zucchini, thinly sliced or shredded
1 cup all-purpose biscuit baking mix
4 eggs, beaten
½ cup butter, melted
½ cup grated Parmesan cheese
½ cup shredded mozzarella or Cheddar cheese
½ cup chopped onion
1 teaspoon minced garlic
½ teaspoon dried oregano
2 tablespoons chopped fresh parsley
½ teaspoon salt
¼ teaspoon pepper

Steps:

  • Preheat oven to 350 degrees F (175 C).
  • In a large bowl, toss zucchini with baking mix until well coated. Add beaten eggs, melted butter, and Parmesan and mozzarella cheeses. Using a large spoon or your hands, work mixture together until well blended. Add onion, garlic, oregano, parsley, salt, and pepper, and mix again. Spread mixture into a 13x9 inch baking pan.

6 -8 eggs
1 cup ricotta cheese
1 cup parmesan cheese, freshly grated
1/4 teaspoon Tabasco sauce (or other hot sauce)
1 teaspoon salt
1/4 teaspoon pepper
3 cups zucchini, grated (2-3 zucchini)
1 1/2 cups plum tomatoes, chopped (4-5 tomatoes)
1/2 cup fresh basil, chiffonade
4 cups day-old bread, cubed
olive oil

Steps:

  • Preheat oven to 350 degrees F. In a large bowl, beat eggs. Add ricotta and beat until smooth. Mix in parmesan, tabasco, salt and pepper.
  • Prepare zucchini, tomatoes and bread. Once you chop tomatoes, squeeze excess moisture out by pressing them in a sieve or wrapping in paper towels and squeezing. Add tomatoes, basil, and zucchini to egg mixture. Moisten bread cubes with a little water; then squeeze out any excess moisture using paper towels. Mix bread into egg mixture.
  • Coat the bottom and sides of a 9 x 13 baking dish generously with olive oil. Pour egg/vegetable mixture into baking dish and even it out. Place casserole in the middle rack of oven and bake for 30 minutes. The casserole should puff up and brown lightly. If it isn't done after 30 minutes, increase oven temp to 400 degrees for 5-10 minutes. Remove from oven and let cool 10 minutes before cutting into squares and serving.

4 cups cubed whole wheat bread (from about 4 slices)
1 cup low-fat ricotta cheese
1/2 cup grated low-fat sharp cheddar cheese
3 cups grated zucchini (from 2-3 fresh zucchini squash)
1 1/2 cups chopped ripe tomatoes
1 cup sliced fresh basil leaf
1/4 teaspoon Tabasco sauce or 1/4 teaspoon ground cayenne pepper
1 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil

Steps:

  • Preheat oven to 350°F In a large bowl beat the eggs. Add the ricotta and beat until smooth. Mix in the grated cheddar cheese, cayenne or Tabasco, salt and pepper.
  • Prepare the vegetables and bread. Add the tomatoes, basil, and zucchini to the egg mixture. Mix the bread cubes into the egg mixture.
  • Coat the bottom and sides of a 9x13 baking dish with olive oil. Pour the egg vegetable mixture into the baking pan and even it out in the pan. Place in the middle rack of the oven. Bake for 30 minutes at 350°F The casserole should puff up and brown lightly. If it hasn't after 30 minutes at 350, increase the heat to 425° and cook for 5-10 minutes further. Remove from oven and let cool on a rack for 10 minutes before cutting into squares to serve.
