WARM CAPRESE ZOODLES
Caprese salad meets sauteed zucchini noodles in this super easy dish filled with basil, tomatoes, and gooey cheese. Make sure all your ingredients are ready to go, because this will be ready fast. Take care not to overcook the zucchini noodles to prevent them from becoming mushy. Adjust the basil to your liking.

Steps:
- Heat olive oil in a large skillet over medium-high heat. Add cherry tomatoes and quickly stir until tomatoes just begin to soften, 1 to 2 minutes. Add zucchini noodles, salt, and pepper. Keep cooking, stirring frequently, until zoodles are tender yet firm to the bite, 2 to 3 minutes.
- Remove from heat and stir in mozzarella and basil. Toss to coat. Divide zoodles between 4 bowls and drizzle with balsamic glaze. Serve immediately.

EASY CAPRESE SLIDERS RECIPE

Steps:
- Preheat oven to 375 degrees.
- In a large baking dish sprayed with non-stick spray, place the bottom halves of the rolls into the dish. Add Balsamic Vinegar and spread it evenly over the rolls. Add shredded mozzarella to each roll then a slice of tomato, then 1-2 basil leaves depending on size. Place the tops of the rolls on top.
- Cover the baking dish with foil, then place into oven. Cook for 10 minutes. Carefully remove foil and place back into oven for 3-5 minutes, or until tops are lightly toasted.
- Use a spatula to remove the sliders and serve immediately.

- Mix mayonnaise, ketchup, and mustard together in a bowl. Season with salt and pepper. Set sauce aside at room temperature or in the refrigerator.
- Saute onion in a small nonstick skillet until soft, about 5 minutes. Season with salt and pepper.
- Combine zucchini and onion in a large bowl. Add egg whites, bread crumbs, and matzo meal. Season with salt, pepper, and cayenne. Mix well. Wet hands and pinch off golf ball-sized pieces. Flatten into small patties.
- Heat olive oil in a skillet over medium-low heat. Add patties and cover the skillet. Cook until golden brown, 7 to 10 minutes. Uncover and flip the patties over. Pan-fry until the other side is also golden brown, about 5 minutes. Remove using a spatula and dab with paper towels to remove excess grease.
- Put a small spoonful of sauce over the bottom half of each roll. Place patties on top. Cover with top halves of the rolls.

- Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin with nonstick spray.
- Trim the ends from the zucchini, then slice lengthwise with a vegetable peeler.
- Line the muffin cups with the zucchini strips.
- In a large bowl, whisk together the eggs, tomato, milk, salt, and pepper.
- Add a few pieces of mozzarella to each zucchini cup.
