ZUCCHINI CASSEROLE
Whenever I take this casserole to a potluck or serve it to guests, I get requests for the recipe. It was created by my friend Pat in Kansas City, Missouri, where my husband, Gene, and I lived until 1-1/2 years ago. Our two grown sons still live there. My sister-in-law gave me a gift subscription to CW last Christmas, and I saw the announcement for the zucchini recipe contest-in my very first issue. What a surprise to win!

Tips:
- Choose the right zucchini. Look for medium-sized zucchini that are firm and have smooth skin. Avoid zucchini that are too large, as they may be tough and seedy.
- Shred the zucchini evenly. This will help to ensure that the casserole cooks evenly.
- Don't overcook the zucchini. Zucchini should be cooked until it is tender but still has a slight crunch.
- Use a variety of cheeses. This will add flavor and richness to the casserole. Some good options include cheddar cheese, Parmesan cheese, and mozzarella cheese.
- Add some vegetables to the casserole. This will make it more nutritious and colorful. Good options include corn, tomatoes, and bell peppers.
- Season the casserole to taste. Salt and pepper are essential, but you can also add other spices, such as garlic powder, onion powder, or chili powder.
- Serve the casserole hot. This is when it is at its best.
Conclusion:
Zucchini casserole is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is easy to make and can be tailored to your own preferences. So next time you have some zucchini on hand, give this recipe a try!
