1 1/2 lbs zucchini, cut into 1/2 inch slices
4 eggs, slightly beaten
1/2 cup milk
1 lb monterey jack cheese or 1 lb mozzarella cheese, grated
1 teaspoon salt
2 teaspoons baking powder
3 tablespoons flour
1/2 cup breadcrumbs
butter or margarine

Steps:

  • Cook zucchini in small amount of water until barely tender, about 5 minutes Drain and cool.
  • Combine eggs, milk, cheese, salt, baking powder and flour.

8 small zucchini, cut into 1/4 inch rounds
1 onion, sliced
6 tomatoes, sliced
½ pound thinly sliced pepperoni
1 (16 ounce) package small curd cottage cheese
¼ pound shredded Cheddar cheese
¼ pound shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Cover bottom of baking dish with half of the zucchini slices. Layer with half of the onion rings, tomato slices and pepperoni slices. Sprinkle with half of each of the cottage cheese, Cheddar cheese and mozzarella cheese. Repeat layers.

It was created by my friend Pat in Kansas City, Missouri, where my husband, Gene, and I lived until 1-1/2 years ago. Our two grown sons still live there. My sister-in-law gave me a gift subscription to CW last Christmas, and I saw the announcement for the zucchini recipe contest-in my very first issue. What a surprise to win!

3 whole chicken breasts, precooked, chopped in chunks (3/4-inch) or 4 cups chopped leftover chicken or turkey
6 cups diced unpeeled zucchini
1 cup diced onion
1 cup shredded carrots
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup sour cream
1/8 teaspoon garlic powder
1 package chicken flavor stuffing mix
1/2 cup butter
1 cup shredded cheddar cheese, optional

  • Combine zucchini and onion in medium saucepan, add water to cover and bring to a boil. Boil for 5 minutes; drain and cool. Combine carrots, soup, sour cream and garlic powder in large bowl.
