4 cups coarsely shredded zucchini

2 medium tomatoes, cut into 3/4-inch pieces
3 tablespoons sliced ripe olives

Steps:

  • In a large skillet, heat butter over medium heat. Add onion and basil; cook and stir until onion is tender, 4-5 minutes.
