I placed it under appetizers, but I think this can be a meal all on it's own, but I've discovered it's great for potlucks & parties. Especially when you know you & your friends are "watching it!"

3 medium zucchini
2 large eggs
9 clove garlic, minced
1/2 tsp dried oregano
3 1/2 c mozzarella cheese, divided
1/2 c parmigiano-reggiano, grated
1/4 c corn starch
1-2 pinch kosher salt
2-5 dash(es) black pepper
1-3 pinch crushed red pepper flakes
marinara sauce, for dipping

Steps:

  • 1. Preheat oven to 425 degrees f. Line a baking sheet with parchment paper.
  • 2. On a box grater or in a food processor, grate zucchini. Using cheesecloth or a dish towel, wring excess moisture out of zucchini.
  • 3. Transfer zucchini to a large bowl with eggs, garlic, oregano, 2.5 Cup of the Mozzarella, Parmesan, corn starch, and season with salt and pepper. Stir until completely combined.
  • 4. Transfer "dough" to prepared baking sheet and pat into a crust. Bake until golden and dried out, about 35 minutes.
