1 cup vegetable oil
2 cups white sugar
1 tablespoon vanilla extract
3 cups grated zucchini
3 cups all-purpose flour
3 tablespoons unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking soda
¼ teaspoon baking powder
½ cup chopped walnuts
½ cup chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Grease and flour two 4x8-inch loaf pans.
  • Beat eggs in a large bowl until light and foamy; mix in vegetable oil, sugar, vanilla extract, and zucchini until thoroughly combined.
  • Whisk flour, cocoa powder, salt, baking soda, and baking powder together in a separate bowl.

3 cups all-purpose flour
2 cups sugar
3 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground allspice
3 large eggs
2 cups grated zucchini
1 cup canola oil
3 teaspoons vanilla extract
1 cup semisweet chocolate chips
1 cup raisins, optional

Steps:

  • In a large bowl, combine the first seven ingredients. In a small bowl, beat the eggs, zucchini, oil and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips and raisins if desired., Pour into two greased 8x4-in. loaf pans. Bake at 325° for 60-65 minutes or until a toothpick inserted in the center comes out clean. 1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 teaspoon baking soda

3/4 teaspoon salt
1 1/2 cups sugar
3/4 cup fat free egg substitute or 3 eggs
1/2 cup unsweetened applesauce
1/3 cup vegetable oil
2 teaspoons vanilla
2 cups grated zucchini, packed
1/2 cup mini chocolate chip

Steps:

  • Preheat oven to 350F, spray 2 8x4 loaf pans with non-stick spray.
  • In a large bowl, combine flour, cocoa, baking powder, baking soda, cinnamon and salt.
