3 cups flour

2 teaspoons baking soda

3/4 cup molasses
2 eggs
1 cup hot coffee

Steps:

  • Toss grated zucchini and salt in a colander. Drain 30 minutes.
  • Meanwhile, mix dry ingredients in a small bowl.
  • Cream sugar and butter in a large bowl.
  • Add eggs and beat until well combined.
  • Add molasses and mix well.

1 1/2 pounds zucchini
2 teaspoons baking powder

1/2 teaspoon ground cloves
2 cups light brown sugar
4 large eggs
1 1/3 cups vegetable oil
3/4 cup whole milk
1 1/2 tablespoons finely grated fresh ginger

24 ounces cream cheese, softened
2 sticks (1 cup) unsalted butter, softened
6 cups confectioners' sugar
