Tips

  • Use ripe zucchini. Zucchini that is too young will be too watery and will not provide the same flavor and texture as ripe zucchini.
  • Grate the zucchini finely. This will help it to blend into the cookie dough more easily and will prevent it from becoming too chunky.
  • Don't overmix the cookie dough. Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the cookie dough before baking. This will help the cookies to hold their shape and will prevent them from spreading too much in the oven.
  • Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before storing them. This will help them to keep their shape and flavor.

Conclusion

Zucchini granola cookies are a delicious and healthy way to enjoy zucchini. They are easy to make and can be customized to your liking. Whether you like them with chocolate chips, nuts, or dried fruit, these cookies are sure to be a hit.
