ZUCCHINI RICE GRATIN

Zucchini Rice Gratin image

Provided by Andrea Albin

Categories     Rice     Tomato     Side     Bake     Roast     Casserole/Gratin     Parmesan     Zucchini     Gourmet     Vegetarian     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 4 to 6 (side dish) servings

Number Of Ingredients 9

1/3 cup long-grain white rice
1 1/2 pounds zucchini (about 3 medium), sliced crosswise 1/4 inch thick
6 1/2 tablespoons olive oil, divided
1/2 pounds plum tomatoes, sliced crosswise 1/4 inch thick
1 medium onion, halved lengthwise and thinly sliced
3 garlic cloves, finely chopped
2 large eggs, lightly beaten
1 teaspoon chopped thyme
1/2 cup grated Parmigiano-Reggiano, divided

Steps:

  • Preheat oven to 450°F with racks in upper and lower thirds.
  • Cook rice according to package instructions.
  • While rice cooks, toss zucchini with 1 tablespoon oil and 1/2 teaspoon salt in a shallow baking pan. Toss tomatoes with 1/2 tablespoon oil and 1/4 teaspoon salt in another baking pan.
  • Roast zucchini in upper third of oven and tomatoes in lower third, turning vegetables once halfway through roasting, until tender and light golden, about 10 minutes for tomatoes; 20 minutes for zucchini. Leave oven on.
  • Meanwhile, cook onion and garlic with 1/2 teaspoon salt in 2 tablespoons oil in a large heavy skillet, covered, over low heat, stirring occasionally, until very tender, 15 to 20 minutes.
  • Stir together onion mixture, cooked rice, eggs, thyme, 1/4 cup cheese, 1 tablespoon oil, 1/4 teaspoon salt, and 1/2 teaspoon pepper. Spread half of rice mixture in a shallow 2-quart baking dish, then top with half of zucchini. Spread remaining rice mixture over zucchini, then top with remaining zucchini. Top with tomatoes and drizzle with remaining 2 tablespoons oil, then sprinkle with remaining 1/4 cup cheese.
  • Bake in upper third of oven until set and golden brown, about 20 minutes.

Tips:

  • To make the perfect zucchini rice torte, start by selecting fresh and firm zucchini. Grate them finely and squeeze out the excess moisture to prevent the torte from becoming soggy.
  • Use a combination of cooked rice and grated zucchini to achieve the desired texture. The rice provides a firm base, while the zucchini adds moisture and flavor.
  • Incorporate a variety of herbs, spices, and seasonings to enhance the flavor of the torte. Common choices include garlic, onion, parsley, thyme, salt, and pepper.
  • Feel free to add other vegetables to the torte, such as grated carrots, chopped bell peppers, or sautéed mushrooms. This will add color and texture to the dish.
  • Use a good quality cheese that melts well, such as mozzarella, cheddar, or Parmesan. Grating the cheese finely will ensure that it distributes evenly throughout the torte.
  • Bake the torte in a preheated oven until the top is golden brown and a toothpick inserted into the center comes out clean. This usually takes around 30-35 minutes.

Conclusion:

Zucchini rice torte is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's a great way to use up leftover rice and zucchini, and it's also a healthy and satisfying meal. With its combination of flavors and textures, this torte is sure to be a hit with everyone at the table. So next time you're looking for a new and exciting way to enjoy zucchini, give this recipe a try.
