Zucchini vichyssoise is a creamy and flavorful soup that can be enjoyed as a light lunch or a hearty dinner. Made with fresh zucchini, leeks, onions, and potatoes, this soup is simmered in vegetable broth until the vegetables are tender. It is then puréed until smooth and creamy. Some recipes add cream or milk to make the soup even richer, while others use a vegan alternative such as coconut milk or almond milk. Zucchini vichyssoise is often served with a garnish of fresh chives, croutons, or a dollop of crème fraîche.

Water
Salt
2 1/2 cups milk
1 tablespoon lemon juice
Freshly ground black pepper
