BLUE CHEESE COLUMBINE DIP image

1/2 lb blue cheese, crumbled
1/3 cup red onion, chopped
1/3 cup olive oil
1 tablespoon lemon juice
1 tablespoon red wine vinegar
1/2 teaspoon garlic, crushed
1 teaspoon dry mustard
1/4 teaspoon black pepper
1/3 cup fresh parsley, chopped
water crackers

Steps:

  • 1 Set blue cheese aside. 2 Combine remaining ingredients in a bowl. 3 Add blue cheese. 4 Cover and let stand at room temperature 2 hours. 5 Serve on crackers.
