1 1/2 cups milk
4 egg whites
3 tablespoons sugar
1 1/4 teaspoons cinnamon
1 teaspoon vanilla
2 tablespoons unsweetened apple juice concentrate
12 slices raisin bread
1/2 cup raisins

Steps:

  • preheat oven to 350 degrees.
  • spray muffin tins with nonstick spray.
  • cube raisin bread.
  • mix milk, egg whites, sugar, cinnamon, vanilla & apple juce.
  • add cubed bread and raisins.
  • let sit for 5 minute.
  • fill muffin tins 3/4 full.
  • bake for 30 minutes.
  • let sit in pan for 10 minutes before serving.
