Steps:
- Rinse catfish and pat dry. Salt and pepper catfish, both sides. Heat veg oil on high/med heat. Just before oil is smoking put catfish in pan fleshy side down. Let cook until sides become opaque, do not move! After sides are opaque flip fish over. Turn heat down to medium. Cook until fish is flaky, about 5 minutes depending on the thickness of fillets. Melt butter in microwave. Add garlic to butter. Slowly add yogurt. Mix in seasonings. Reheat the mixture in microwave, about 30 secs. After fish is cooked through, Place catfish on serving platter and spoon sauce over. Garnish with chopped parsley and lemmon slices.
