CARROTS & GROUND BEEF image

Mama told me what to do and this time I did!

Number Of Ingredients 7

2 lb ground beef
6 can(s) carrots
2 c white onions
1/4 c brown sugar, light
creole seasoning
nonstick spray (pam)
4 c rice, cooked and hot

Steps:

  • 1. Spray nonstick spray in a large pot, brown ground beef very well, no pink left.
  • 2. Add onions to ground beef until wilted.
  • 3. Add brown sugar to carrot and ground beef.
  • 4. Drain carrots but save juice for later instead of using water. In a large bowl mash carrots using a potato masher. Add to ground beef.
  • 5. Cook on medium heat for about 1 hour, stir often so it doesn't stick. You may have to adjust heat. It should get very thick as it cooks down. Add saved carrot juice as needed.
  • 6. It should be a little juicy when done. Season to your taste.
  • 7. Serve over hot rice and eat it up. It's some good.
