CHEDDAR/GREEN CHILE MASHED POTATOES image

3 pounds russet potatoes, peeled
1/4 cup unsalted butter
1 cup whole milk
1 cup shredded sharp cheddar cheese
1 can (4-ounce) diced roasted mild green chiles, drained
1/2 teaspoon ground cumin
Kosher salt and fresh ground black pepper

Steps:

  • 1. Boil potatoes. Drain and mash with butter and milk. Stir in cheese and chiles; season with cumin, salt and pepper.

These mashed potatoes are the bomb! I love the spicy kick from the green chilies and the cheddar cheese makes them so rich and creamy. I've made them several times now and they're always a hit.

I thought these mashed potatoes were just okay. I found the flavor to be a bit bland and the texture was a little too gluey for my taste. I probably won't make them again.
