Yield 12 muffins

Number Of Ingredients 11

2 C. All purpose flour
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1/2 C. Granulated sugar
2 Eggs
1 C. Light cream
1/3 C. Ketchup
1 C. Celery, chopped finely
1 Chicken burger, cooked and chopped finely
1/3 C. Spinach leaves, chopped finely

Steps:

  • Preheat oven to 375 degrees Fahrenheit Grease a 12 cup muffin pan and set aside In a large bowl combine cream and eggs together Stir with a wire whisk until mixture is frothy Pre cook spinach leaves in boiling salted water for a few minutes until mixture comes to a boil and then pour off excess water and set aside Add cooled chopped spinach leaves, ketchup, celery and cheese to egg mixture and mix until well combined Stir in dry ingredients with wire whisk and mix all together Pour batter into greased muffin cups filing 2/3 full and bake in oven for 20 minutes Place on a serving platter for dinner time
