Cherry Streusel Muffins image

Vegan yumminess.

Number Of Ingredients 14

2 c flour
1 1/2 tsp baking powder
1 tsp baking soda
1 c frozen cherries, thawed and chopped
1/2 c canola oil
3/4 c sugar
1 c almond milk
1/3 c orange juice
STRUESEL TOPPING
1/4 c brown sugar
1/4 c oatmeal
1/4 c flour
1/4 c pecans, chopped
3 Tbsp earth's balance butter

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Line muffin pan with papers.
  • 3. Combine milk, oil and orange juice.
  • 4. Shift together the flour, baking powder and baking soda.
  • 5. Add the sugar and stir in the wet ingredients.
  • 6. Fold in the cherries.
  • 7. Spoon into prepared muffin tin.
  • 8. Streusel Topping
  • 9. Combine topping ingredients, except butter.
  • 10. Mash in butter until mixture is crumbly.
  • 11. Top muffin with streusel mixture.
  • 12. Bake 20-22 minutes.
  • 13. Cool in pan 20 minutes.
  • 14. Enjoy!
