My fast chicken entree featuring artichokes and olives has real Greek flair. Seasoned with lemon juice and oregano, the stovetop chicken turns out moist and tender. -Carol Latimore, Arvada, Colorado

I'm not a huge fan of artichokes, but I really enjoyed this dish. The chicken was cooked perfectly and the artichokes were not overpowering.

This recipe is a great way to use up leftover chicken. I made it with rotisserie chicken and it turned out great. The artichokes add a nice touch of flavor and texture.
