Steps:
- 1. Season the chicken with salt and pepper. Heat the oil and brown the chicken on both sides. Add the sliced garlic and onions. Cook for about 5 more minutes.
- 2. Remove the chicken and set aside. Add the vinegar and bring to a boil. Boil about 5 minutes. Add the chicken back to pan and pour the chicken stock over top and add the paprika and oregano.
- 3. Cook until chicken is done. Remove the chicken and set aside. Strain the sauce through a fine mesh strainer and discard the solids. Put the sauce through a fat separator
- 4. Serve sauce with chicken and garnish with scallions.
