Chicken Macaroni Stew image

Number Of Ingredients 11

8 oz tomatoes, canned
1 c mixed vegetables, frozen
1/3 c macaroni, dry
1/4 c onion, chopped
1/4 tsp oregano
1/4 tsp salt
1/8 tsp garlic powder
"just a pinch" of pepper
1 bay leaf
1 c chicken stock
3/4 c chicken, cooked and chopped

Steps:

  • 1. Break up large pieces of tomatoes.
  • 2. Place all ingredients except chicken into saucepan; Bring to a boil.
  • 3. Reduce heat and boil gently, uncovered, until macaroni is tender--about 15 minutes - Stir several times to prevent macaroni from sticking.
  • 4. Add chicken and heat to serving temperature.
  • 5. Remove bay leaf.

I tried this recipe and it was a disaster. The chicken was tough and the macaroni was overcooked. I would not recommend this recipe.
