Chili Cheese Casserole image

This recipe is from a friend in New Mexico. I posted the recipe for roasting chili peppers. This is a tried and true recipe. In New Mexico they always have a bag of the roasted peppers in the refrigerator at my friends house. They use them in everything from salads to appetizers. The appetizer was just the roasted chili peppers on a soda cracker, but real good.
