Chili Mac image

This is one of our favorite comfort foods.

Number Of Ingredients 14

2 c uncooked elbow macaroni (10 ounces)
2 lb lean ground beef
1 medium onion, diced
8 clove garlic, minced (or 2 tsp granulated)
28 oz can petite diced tomatoes
16 oz can kidney beans, drained and rinsed
6 oz can tomato paste
4 oz can chopped green chilies
1 1/2 tsp salt
1 Tbsp chili powder
2 tsp ground cumin
1/2 tsp fresh ground black pepper
1/2 tsp ground red pepper (cayenne)
8 oz mexican blend shredded cheese

Steps:

  • 1. Cook macaroni according to package directions until just less than al dente. Meanwhile, in a large skillet over medium-high heat, brown and crumble hamburger with onion and garlic until no longer pink. Drain fat and return to stove and add the remaining ingredients except for the cheese.
  • 2. Pre-heat oven to 375ยบ. Drain macaroni, add to beef mixture, stir to combine, cover and simmer for 15 minutes.
  • 3. Transfer to 13x9x2 baking dish coated with non-stick spray. Cover and bake until bubbly, about 25 minutes. Uncover, sprinkle with cheese and bake 5-8 minutes until cheese is melted.
