CHILLI TUNA PASTA SALAD image

300g of large shell pasta
250g of fresh green beans trimmes and halved
2x185g of tuna in brine or in chilli oil
1/3 cup of coarsley chopped fresh parsely
1/3 cup of firmly packed fresh basil leaves (torn)
150 g of baby rocket leaves
1/4 cup of olive oil
1/4 cup of lemon juice
2 cloves of garlic crushed
2 teaspoons of sugar.

Steps:

  • Cook pasta in a large saucepan of boiling water, uncovered until just tender, drain. Rince under cold water and drain again. Meanwhile boil, steam or microwave the beans until just tender, and refresh under cold water once cooked. Drain the tuna and reserve the oil, place tuna in a large bowl and flake with a fork, add pasta and beans with herbs, rocket and toss gently to combine. place remaining ingredients and the reserved oil in a jar and shake well, drizzle oil over the mixture and serve.
