Chive Muffins image

I made these with the first chives from my very own garden! Just call me Farmer Marina! :-)

Number Of Ingredients 9

2 c all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1 Tbsp granulated sugar
1 Tbsp brown sugar
1 large egg, slightly beaten
1 c milk
1/4 c chopped fresh or freeze-dried chives
1/4 c butter, melted

Steps:

  • 1. Combine first 5 ingredients in a medium bowl; make a well in center of mixture.
  • 2. Combine egg and remaining 3 ingredients; add to dry ingredients, stirring just until dry ingredients are moistened.
  • 3. Spoon batter into a lightly greased muffin pan, filling two-thirds full.
  • 4. Bake at 400 for 18 minutes or until lightly browned.
  • 5. Remove from pan immediately.

These muffins were a bit dry for my taste, but the flavor was good. I think I'll try adding some sour cream or buttermilk to the batter next time to make them more moist.

I love these muffins! They're so easy to make and they're always a hit with my family and friends. I especially love the chives, which give them a unique and flavorful twist.

These muffins were absolutely delicious! I made them for a brunch party and they were a huge hit. The chives give them a lovely delicate oniony flavor, and the muffins are so moist and fluffy. I will definitely be making these again.
