Chocolate Chip Yogurt Cookies image

It's hard not to love a good chocolate chip recipe! And this one is eggless. It's also how I tell myself I'm eating "healthy." I get my yogurt and my chocolate fix all at the same time! And one of the best things...my teenage son asks me for these cookies! He loves them!

Number Of Ingredients 11

1/2 c sugar
1/2 c brown sugar, firmly packed
1/4 c margarine, softened
1/4 c shortening
1/2 c vanilla, banana or plain yogurt
11/2 tsp vanilla extract
1 3/4 c flour
1 Tbsp freshly ground flaxseed (optional)
1/2 tsp baking soda
1/2 tsp salt
1/2 c semi-sweet chocolate chips

Steps:

  • 1. Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper or leave sheet ungreased.
  • 2. In a large bowl, beat sugar, brown sugar, margarine and shortening until light and fluffy. Blend in yogurt and vanilla.
  • 3. In a separate bowl, combine flour, flax, baking soda and salt. Slowly add to sugar mixture until blended. Stir in chocolate chips.
  • 4. Drop by spoonfuls onto prepared pan. Bake for 8-12 minutes or until light golden brown.

I'm allergic to dairy, so I used almond milk yogurt instead of regular yogurt. The cookies turned out great!
