PASTA
2 lb macaroni, elbow (any pasta will work)
CHORIZO
2 lb chorizo (mexican sausage, mild or medium
1 large onion (diced)
10 clove garlic (whole or diced)
2 yellow crooked neck squash
1 tsp ground black pepper
2 tsp each: ground cumin,garlic powder
1/4 tsp ground cayenne pepper
1 can(s) tomato paste (6ounces)
3 can(s) water (use tomato paste can to measure)
2 can(s) black beans
2 can(s) tomatoes (diced)

Steps:

  • 1. 1 box or bag (2 pounds) elbow macaroni. Cook elbow macaroni as directed on box.
  • 2. Drain and rinse the pasta in a colander. Set aside.
  • 3. While the elbow macaroni is cooking: In a large skillet, cook the chorizo, onion, garlic and yellow squash until cooked (about 10 minutes).
  • 4. Add the diced tomatoes, tomato paste, water and spices. Simmer 5 minutes.
  • 5. Put some elbow macaroni into bottom of bowls. Scoop Chorizo Sauce mixture on top of elbow Macaroni.
  • 6. Serve! *** You can also add some pasta to the other ingredients, but I prefer not to. *** optional: taco toppings to garnish.

I'm not a fan of chorizo, so I used ground beef instead. It was still very good!
