Chuckwagon Carrots image

The addition of crisp bacon to the carrots gives a nice lightly smoked favor. It has been a favorite with my family for many years. It originated in the "Treasury of Country Recipes" published by Land O Lakes about 15 years ago. Even people who don't normally eat carrots love this dish! You can easily double the recipe for a potluck dish. If you want to decrease the fat, just substitute light margarine and turkey bacon.

These carrots are a great way to use up leftover carrots. I usually have a few carrots left over from other recipes, and these carrots are a great way to use them up.

These carrots were a little too spicy for my taste, but I think that's just because I used a hot pepper jelly. I'll use a milder jelly next time.

I followed the recipe exactly, but my carrots didn't turn out as tender as I would have liked. I think I'll cook them for a little longer next time.
